Peppermint, the award-winning farm-to-table restaurant at PARKROYAL COLLECTION Marina Bay, Singapore, is bringing bold, flame-grilled flavours to the table with a new Roast & Grill buffet, available from 13 May until 5 June 2025.
As Peppermint’s newly rebranded international buffet, Roast & Grill is also available in between the restaurant’s exciting line-up of rotating, thematic buffets, from 11 to 20 August, 29 Sep to 9 Oct and 10 to 12 Nov 2025.
Led by Peppermint’s Chef de Cuisine Leon Yee and his dedicated culinary team, this buffet experience brings the bold, smoky allure of open-fire cooking to centre stage, celebrating grilled specialities from around the world.
The highlight of the buffet is the Hay-Smoked Grilled Wagyu Beef Belly, available exclusively on weekend dinners. Another standout is the 8-Hour Slow Roasted Whole Veal Shank with Charred Onion Sauce—a hearty centrepiece that reflects the buffet’s focus on rustic, slow-cooked dishes. Available exclusively during dinner service, guests can also look forward to the Grilled Thai-Style Regionally Sourced Seafood Wrapped in Opal Leaf, a delicate dish that melds traditional Thai flavours with a sustainable touch.
Grilled delights continue across continents, starting with bold, spice-laden creations from China and Korea. Look forward to dishes such as Chongqing Mala Grilled Fish Collar and Cumin-Spiced Lamb Skewers—each offering a fiery kick—alongside savoury Xin Jiang Lamb Ribs with Cumin and Chilli and wok-charred Dried Pot Cabbage with Garlic and Dried Chilli.
Indonesian classics include smoky renditions of Ayam Bakar (Indonesian-style Grilled Chicken), Sate Lilit (Lemongrass Chicken Skewers), and Balinese Ikan Bakar (Grilled Fish in Banana Leaf). As for Thailand, its iconic street food culture is brought to life with juicy Thai-Style Grilled Chicken, Grilled Gai Ping, Thai Garlic Mantis Prawn with Basil, Grilled Squid with Thai Green Chilli Dip, and more.
From the Mediterranean and North Africa, expect vibrant, rustic flavours with dishes like Salt-Baked Whole Sustainable Seabass with Tomato Relish, Grilled Whole Sustainable Giant Barramundi, and Mediterranean Herb Roasted Lamb Leg with Lemon Mint Cous Cous. For a showstopping weekend dinner, indulge in the Whole Slow Roasted Baby Lamb, served carving-style.
Complementing the grilled selections is an extensive buffet spread featuring fresh Seafood on Ice, Japanese Delights, Singaporean Favourites, Italian Pastas and Pizzas, Western Hot Dishes, Vegetarian Indian Selections, and an indulgent range of desserts to conclude the meal on a sweet note.
True to its farm-to-table philosophy, Peppermint incorporates herbs, vegetables, fruits and edible flowers freshly harvested from its on-site Urban Farm and other local and regional suppliers, while continuing to offer halal-certified buffet stations—making it one of the most inclusive dining destinations in the Marina Bay precinct for all types of gatherings, ranging from family celebrations to corporate outings.
