Known for its generous spreads and lively live stations, Oscar’s at Conrad Singapore Marina Bay presents two new themed dinner experiences: The Sea, Smoke & Spice and Flavours of Yesteryear. THE SEA, SMOKE & SPICE
From Wednesdays to Saturdays, The Sea, Smoke & Spice presents a bold curation of ocean delicacies, grilled meats and spice-rich specialities. Guests begin at the Ice Bar, where freshly shucked Oysters, Slipper Lobsters, Flower Crabs and Mussels offer a refreshing taste of the sea — a chilled overture to an evening of vibrant flavours.
Outdoors, the experience centres around Oscar’s live charcoal BBQ, where the heat of the grill brings out the best in land and sea. Chargrilled Octopus with jacket potato and sour cream, Sticky Australian Lamb Ribs, Spice-rubbed Hanger Steak, Kurobuta Pork Tomahawk and Herb- buttered Veal Sausage Rolls are served hot off the coals — kissed with smoke and layered with bold marinades. Locally-farmed Barramundi, grilled in banana leaf and finished with asparagus, adds a coastal highlight.
Alongside, a full Outdoor Tandoori Station anchors the spice trail — serving Indian and Arabian Specialities including Murgh Bharwan, tandoori seabass, grilled spiced mushrooms, and slow- roasted lamb shoulder, paired with fresh naan and an array of chutneys, raita and pickles.
To conclude, the dessert spread is dedicated to one key ingredient: the strawberry. Celebrated for its freshness and natural vibrancy, it stars in shortcakes, praline tarts, mousse domes and the signature Strawberry Romanoff. The fruit’s delicate tartness and perfume offer the perfect counterpoint to the intensity of the savoury courses. Live waffles and a chocolate fountain round out the finale.
The Sea, Smoke & Spice dinner buffet is available from Wednesdays to Saturdays, 6:00 PM to 10:00 PM, and is priced at S$96++ per adult and S$48++ per child (aged 6 to 12).
FLAVOURS OF YESTERYEAR
From Sundays to Tuesdays, Flavours of Yesteryear offers a nostalgic return to the comforting flavours of home — inspired by Oscar’s long standing reputation as a favourite among local diners. This dinner theme shines a spotlight on recipes contributed by the restaurant’s own multicultural team of chefs, each drawn from personal heritage and prepared with heart.
Expect a soulful spread of familiar signatures: Ayam Masak Merah, Beef Rendang, Nasi Goreng Kampung, Sambal Udang Petai, Fried Carrot Cake, Sayur Lodeh, Spicy Banana Leaf Baked Fish,and Singapore Chilli Crab — dishes that bring generations together through shared memory and flavour.
Live stations bring energy to the evening, with signatures like Hainanese Chicken Rice and Babi Panggang prepared to order — the former a perennial local favourite, the latter featuring grilled pork served with chilli kicap manis, tofu and tempeh. The buffet also features dishes with diverse culinary roots, such as Portuguese-influenced Minchi, Slow-cooked Oxtail Stew, Mie Goreng and sotong kangkung — each one telling a story of Singapore’s vibrant food heritage.
Desserts continue the nostalgic journey with creamy Durian Pengat, colourful Nyonya Kuehs, pandan chiffon cake and classic Swiss rolls, served alongside freshly made waffles topped with local flavours.
