Presenting Crouching Tiger, Hidden Dragon by Paradise Classic featuring fresh seafood such as crabs, prawns, garoupa fish and squid in deliciously, rich, flavourful broth. The dish is named as Crouching Tiger, Hidden Dragon is available in 2 flavours, seafood and spicy. The origins of the name comes from the interesting fact that in Malaysia, crabs is known as tigers of the seas and prawns are known as dragons. The dish above is the seafood version and the broth is boiled for more than six hours using pork bone, Hua Diao wine, sesame sauce and bean paste.
The delicious spicy broth as above is boiled more than 4 hours and punched up by the flavours of homemade chilli paste, Chinese herbs, salted fish, coconut milk and more.
We enjoyed both versions, the seafood broth is good for those who can’t take spicy, it is comforting, savory and nutritious. The spicy version is tangy and gives more kick to your taste bud that makes every mouthful a delight!
Other than Crouching Tiger, Hidden Dragon, diners can look forward to indulge in exquisite and popular Nanyang-style dishes like Crisp-fried Fish Skin with Salted Egg Yolk; Chilled Jellyfish in Garlic Soy Vinaigrette; and Signature Roasted Chicken.
Crisp-fried Fish Skin with Salted Egg Yolk (S$10.80)
In Singapore, anything is salted egg yolk is very popular. If you are addicted to salted egg yolk, you have to try this starter dish. The salmon skin is coated with fragrant and piquant salted egg yolk lava, so crunchy and addictive. You will love this!
Chilled Jellyfish in Garlic Soy Vinaigrette (S$9.80)
This chilled appetiser dish is a new take on Paradise Classic’s previous version that is served with spicy garlic sauce. This silky smooth jellyfish is steep in aged vinegar and paired with invigorating cucumber.
Signature Roasted Chicken (S$18/half and $36/whole)
The Signature Roasted Chicken is new to the menu and diners will enjoy this tender and juicy meat with crispy skin that comes off from the bone easily. The meat is so tender and juicy. What’s good is that the chefs use minimal seasoning so that you can enjoy the natural goodness of the chicken that will make you crave for more.
The Stewed Silver Needle Noodle with Salted Fish in Claypot (S$15.80)
This dish showcases the chefs’ desire for experimenting, diners can look forward to indulge in silver needle noodle also known as rat noodle which is not commonly found nowadays. The salted fish used is steamed before hot oil is drenched over to bring out the added fragrance. Upon lifting the claypot lid, the service staff will add the accompanying small saucer with lime juice and salted fish paste into the dish. This will further enhance the salted fish fragrance as compared to adding this during the cooking process. A must try when you dine at Paradise Classic!
