Dream Cruises has elevated its 10th anniversary celebrations to new heights with an unforgettable gastronomic experience aboard the Genting Dream. Combining luxury travel with haute cuisine, this special sailing from Singapore to Melaka showcased the artistry of acclaimed Chef Tommie Lee also known as “Chef French Papa” from the Netflix series Culinary Class Wars.

This milestone event reflects the cruise line’s commitment to delivering premium lifestyle experiences at sea, as it continues to redefine modern cruising in Asia. Dream Cruises itself is part of the revitalised StarDream Cruises group, offering luxury voyages across the Asia-Pacific region.

As part of the invited media onboard this celebratory voyage, we had the opportunity to experience the menu firsthand, an amazing evening that blended storytelling, craftsmanship and refined flavours at sea.

A Culinary Experience at Sea

Guests onboard were treated to an intimate and immersive culinary experience as Chef Tommie Lee made a special appearance, sharing his journey, inspirations and passion for food in a live session. The interaction offered a deeper appreciation of the philosophy behind each dish.

The highlight of the sailing was a specially curated French menu, elevated with a pairing from Veuve Clicquot. Each course reflected a balance of classic French techniques and modern finesse, creating a cohesive and refined dining journey.

A Course-by-Course Journey Through French Excellence


1. Escargot Vol-au-Vent

The experience began with delicate bites of escargot encased in a light, buttery vol-au-vent pastry shell, delivering a balance of richness and texture.

The pastry was crisp and flaky, while the escargot was well-seasoned and tender rich yet controlled, making it a refined and well-executed start.

2. Prosciutto with Mesclun Salad

This was followed by a refreshing combination of prosciutto with mesclun greens, complemented by shaved Parmesan, Kalamata olives and a bright lemon dressing.

Clean and balanced, the acidity from the dressing lifted the dish nicely, preventing the prosciutto from feeling too heavy and keeping the course fresh and vibrant.

3. Bouillabaisse Maison

The menu then moved into deeper flavours with a bouillabaisse maison, infused with saffron and featuring a selection of fresh seafood.

The broth was aromatic and comforting, with a distinct saffron note, while the seafood remained fresh and properly cooked delivering both depth and authenticity.

4. Slow-Roasted Veal Tenderloin

The main course featured slow-roasted veal tenderloin paired with foie gras and truffle roulade, accompanied by green pea mash, roasted carrot purée and a velvety port wine sauce.

The veal was tender and succulent, complemented by the richness of foie gras and the earthiness of truffle, an indulgent and well-composed centrepiece.

5. Chocolate Mousse with Dulce de Leche Espuma

The dining experience concluded with a chocolate mousse paired with dulce de leche espuma, offering a smooth and indulgent finish.

Silky in texture, the mousse was rich without being cloying, while the espuma added a light caramel sweetness that rounded off the meal elegantly.

Continuing the Celebration

While Chef Tommie Lee’s onboard appearance was exclusive to this sailing, guests can continue to enjoy his specially curated menu on upcoming Genting Dream sailings from 3 May to 3 July 2026. The menu will be available at the ship’s Bistro Restaurant, priced at SG$90 nett per person, or SG$132 nett per person with wine pairing.
