The marbling and tenderness were immediately evident, and watching the chefs at the outdoor Riverside Grill sear the pork belly and yakiniku slices to juicy perfection was a feast for the senses even before the first bite. The shabu-shabu station added a comforting contrast, with paper-thin slices of pork gently simmered in aromatic broth, pairing beautifully with crisp seasonal greens and the chef’s signature dipping sauces. Every bite of the shirobuta delivered a subtle umami richness that truly melted in the mouth, making it clear why this breed is so celebrated in Japan.
Beyond the star pork selections, the buffet offered a diverse spread of Japanese and Korean delights. Refreshing banchan like Crab and Cucumber Salad and Gochujang Cold Tofu balanced the richness of the meats, while comforting soups like Oden and Ginseng Chicken Soup warmed the soul.
