In Singapore, Chef Maksym has left an indelible mark, spearheading the Michelin-starred ‘Nua Irish’ concept at Cure Singapore, leading to its first Michelin star in 2021. He also introduced contemporary Asian dishes at CÉ LA VI. The meal commences with a complimentary homemade Milk Bread, glazed with luscious gula melaka and paired with velvety whipped brown butter—a delightful prelude to the courses that follow.


The trio of appetisers sets the tone for the meal:

  1. White Asparagus, Chervil, Yuzu: Crunchy white asparagus heads crowned with egg yolk jam and a burst of yuzu zest.
  2. Kueh Pie Tee, Smoked Petuna Trout, Horseradish: House-smoked Petuna trout belly, cured in kelp salt, paired with freshly grated horseradish.
  3. Hamachi Toro, Wasabi, Ginger Crisps: Savoury hamachi toro with Japanese mayo and yuzu kosho, nestled in a homemade rye crust topped with crispy ginger.

Main Courses

  1. Kagoshima Yellow Tail, Kohlrabi, Cucumber Ponzu: Tender yellowtail loin cured in kombu seaweed, served with diced cucumber, radish, and a cucumber juice and ponzu sauce.
  2. ‘Xing Ren Dou Fu’, White Asparagus, Nomad Caviar, Almond: Sautéed white asparagus with almond-infused mousse, caviar, and a rich almond milk and hazelnut oil sauce.
  3. Tom Yum, Danish Langoustine, Calamansi: Grilled premium Danish langoustine tails over binchōtan, served with a tom yum-inspired broth in a calamansi gel-rimmed glass.
  4. Aged Quail, Spring Alliums, Scallions ‘Hua Juan’, Szechuan Pepper: Australian quail aged in-house, featuring deboned legs with puffed quinoa, medium-rare quail breast with wild garlic, and a homemade Chinese steamed bao.


Ice Kachang, Rhubarb, Mascarpone


  1. Ice Kachang, Rhubarb, Mascarpone: Rhubarb jam and whipped mascarpone with tangy ice kachang and topped with fresh rhubarb compote, creating a refreshing palate cleanser.
  2. Japanese Strawberry, Hokkaido Milk, Soya Sauce: Hokkaido milk sorbet with Japanese strawberry jam and sweet Japanese shoyu.
  3. (Exclusive to the six-course menu) Pineapple Tart ‘Cloud’: Frozen pineapple purée orbs, creating a delicate, tropical finish.
